Endivia De Bruselas

In October-November, pull up the roots and leave them to dry, cut the leaves 3 cm from their collars and place them in a pit or trench about 15 cm deep, vertically and 3 cm apart. Cover the trench with about 15 cm of light, healthy soil, protecting it from the rain, and collect the leaves in the trench.
